From the 17th century to the present
The history of the building

The building would have been built around the year 1664. At the time, the building was a former private mansion belonging to a family of notaries. Subsequently, the building housed, at the same time and under the same roof, a daycare center and a collection office. It was bought to become a restaurant. It was in March 2022 that Nadine and Jean-François Laurent, immersed in the hotel and restaurant industry since a young age, bought the building to make it the guest house and the gourmet restaurant that you know today.

Nadine, Jean-François and Éric Laurent Meet your hosts

Nadine, Jean-François and Éric Laurent come from a family of hoteliers and restaurateurs for several generations. Éric worked in service and in sommelier, becoming a hotel manager. Jean-François worked in restaurants, he studied with Pierre Troisgros and Michel Guérard

After being exiled to the four corners of the world, they returned to Mirepoix in Ariège, a region that they particularly like for its history, its landscapes, its regional products and its gentleness of live.
